Need a quick easy lunch that doesn’t send you into a coma?
Our VitaFresh lettuce and herbs combined with marinated chicken and honey-mustard dressing makes for a crunchy, zesty delight perfect for a summer afternoon light meal, especially when paired with a cool glass of minty lemonade or your favourite, chilled white wine.
Here’s what you’ll need for it:
Marinated Chicken
1 bunch VitaFresh Basil
1 bunch VitaFresh Oregano
1 teaspoon Chopped garlic
2 Chicken Breasts
1 cup Double Cream yogurt
Honey Mustard Dressing
3 tablespoons Honey
2 tablespoons Mustard
3 tablespoons Apple cider vinegar
3 tablespoons Olive oil
Salt and pepper to taste
Leafy Greens
1 Head VitaFresh Fancy Green Lettuce
1 Head VitaFresh Butterhead Red lettuce
Procedure
Step 1
Chop up your fresh Basil, Oregano and garlic as finely as possible. Mix these together with your choice of either plain or Greek double cream yogurt.
Step 2
Chop your chicken breasts together into your preferred size or shape (thinner cooks faster but can also become chewy). Bathe the chicken breasts in your yogurt marinade. If you really wat to lock I the flavour, you can allow this to sit covered in your fridge for an hour or two, but it’s not crucial.
Step 3
Melt some butter in a flat pan over medium heat. We used garlic butter for some extra flavour but any butter or even olive oil will do. Fry your chicken until its brown on the outside, and white and juicy on the inside.
While that’s cooking, cut up and toss up your VitaFresh lettuce into a large bowl. Mix all the ingredients for your Honey mustard dressing into a bowl and wix them together well.
Step 4
Once your chicken is ready, toss it straight together with the lettuce and dribble that tasty dressing liberally over your creation, before tossing it again to make sure everything is well coated. A fresh orange squeezed over the top and some sprinkled blueberries is the perfect way to round the meal up.
